Tossed salad with a twist of flavour

Fresh basil and tarragon give this simply dressed leaf and herb salad a lift.

  • 2 cos lettuces, cut across into thick slices
  • 6 red salad bowl lettuce leaves
  • ¼  cucumber, thinly sliced
  • 12 large fresh basil leaves, roughly torn
  • 1 tablespoon coarsely chopped fresh tarragon
  • 5 large spring onions, thinly sliced
  • 8 tablespoons olive oil
  • a dash of balsamic vinegar
  • 2 tablespoons honey
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic, minced

Recipe method

1. Place the cos lettuce, red coral, cucumber, herbs and spring onions in a large salad bowl.

2. Mix the oil, vinegar, honey, lemon and garlic together.

3. Just before serving, drizzle over the dressing and toss thoroughly with salad servers or clean hands until the ingredients are coated lightly with the dressing. Serve immediately.
