10 Wonderful Ways with Parsnips

Parsnips. Do you just buy them at Christmas and then forget about them? Don't do that. They're awesome!

Parsnips are a staple here in Scotland. They sweeten up during a hard frost and lets face it, we have plenty of those up here. They're often roasted alongside potatoes, made into soup or sometimes added into bubble and squeak or rumbledethumps, a Scottish potato and cabbage pie. Do you need some ideas? 

 

Here are 10 of my favourite parsnip recipes:

 

Parsnip, Carrot and Lentil Soup

A great soup for these cold winter days.  It's simple to make and so satisfying. It's also the perfect dish if you're trying to lose weight.

I first tasted these crisps from good old Marks and Spencer. I loved them so much I had to try to make them myself; and they were a doddle, although very, very addictive.

Flapjacks are a great healthy snack and these flapjacks are healthier than most. Carrot, parsnips, apple, raisins, seeds and coconut. You'll never buy flapjacks once you see how easy they are to make.
