10 Sweet and savoury tray bakes

Delicious and simple meals that are perfect for summer holidays—and beyond.

As we look forward to the summer holidays, it's time to start thinking about easy but flavourful meals that are kind to the cook—as well as being tasty for all the family.

Savoury tray bakes are a dream for busy cooks, as you prepare a complete meal, in most instances, in one tray! And then there are the sweet versions, which can be enjoyed hot or cold and are perfect for summer picnics, as well as for rainy days.

The following delectable sweet and savoury tray bake recipes should see you through the holidays and beyond.

 

1. Fig and almond cake

This delicious tray bake cake uses fresh figs on top and ground almonds in the sponge. You can also put a teaspoon of almond extract in—making it very Bakewell Tart-like! Perfect when served hot with custard, and equally tasty cold.

2. One-pan lemon asparagus chicken

This recipe provides a quick and simple dinner using chicken breasts, roasted with potatoes, asparagus, lemon and honey. Meat, potatoes and veggies all done together? On time? And with less washing up? This is the real deal of healthy, easy dinners.

 

3. Tunnock's Teacake rocky road

Tunnock's Teacakes are a taste of my childhood, so I was captivated when I saw this recipe! The teacake's component parts of chocolate, marshmallow and biscuit are the same as those in a Rocky Road recipe, so why not combine both? This is Scotland in a tray bake, and is perfect for anytime of the year!

4. One-tray oven-baked hake and chips

This fabulous recipe for low-fat oven baked fish and chips only uses one pan—and will prove to be a family favourite at the supper table—it uses prime Scottish hake in place of cod or haddock, which is a more sustainable fish.

 

5.  Rhubarb crumble tray-bake cake

This delectable crumble tray bake cake makes the most of fresh, seasonal rhubarb and is just as delicious when served warm (with cream), as it is when eaten cold for afternoon tea or in the school/office lunch box. Perfect for picnics and cake stalls. It also freezes well and is an "all in one cake mix", so it only uses one tray and one bowl!

 

6. Roast vegetable, veggie sausage and chickpea bake

A lovely veggie tray bake that’s just bursting with colour and flavour! This bake is an easy two-step process. First throw in all the veggies and sausages, coat them in a little oil and roast them until they are tender and a little charred, then add the tomatoes, chickpeas, spices and stock—and it's then just a case of leaving it to cook!

 

7. Peach streusel tray bake

Here's a peach of a recipe! This is a yeast cake with a cinnamon crumble and a juicy peach topping. Delicious on its own or served warm with a dollop of cream or custard, it offers both a nutty crunchy layer and a soft sweet dough underneath.

8. Tian Provençal (summer vegetable gratin)

Tray bakes aren't all about a complete meal, and this delicious summery gratin can be served as an accompaniment to any main meal or BBQ. This is an authentic recipe from the Provençe, where summer vegetables are baked in an earthenware dish of the same name. Use any summer vegetables you have to hand—aubergines and peppers are also good in this recipe.

 

9. Dulce de leche (caramel) banana brownies

The ultimate tray bake recipe has to be gooey and chocolaty brownies! This recipe isn't just a plain or common-garden brownie however—it's an ensemble of 70 per cent cocoa solids, chocolate sauce, caramel and caramelised bananas. As you can see from the photo, they look utterly irresistible!

 

10. One-pan English breakfast

I can't omit a recipe for the most important meal of the day—breakfast! Here's a recipe for all the full English breakfast components of sausages, eggs, bacon, beans, mushrooms and tomatoes in one tray  bake—ideal for a holiday breakfast or brunch.
