3 cocktails to enjoy this summer
Andrew Barrow selects three tasty and summery cocktails for you to enjoy.
I receive a large amount of cocktail recipes in my inbox. They usually originate from bars (often using impossible to find ingredients) and spirit PR companies (who I doubt have actually tasted some of the concoctions they suggest). Having been stuck in a bit of a rut with my usual cocktail repertoire, I thought I would delve into these emails and try a few out.
I forced myself to leave the gin behind. However popular gin is at the moment, with me and everyone else out there, there are other spirits to play with.

Merlet C2 Espresso Martini 

For me a cocktail is usually an aperitif; seldom do I indulge in an after dinner cocktail. The idea of combining a cognac and coffee does appeal though. The Merlet Espresso Martini cocktail is available in London during June from one of three Grind Espresso & Cocktail bars (Soho Grind, Holborn Grind, Shoreditch Grind) and is a very reasonable £5.
Merlet C2 Espresso Martini
Ingredients
  • 40ml Merlet Brothers Blend
  • 15ml Merlet C2 Café Cognac
  • 10ml Sugar syrup
(or to taste)
  • 1 shot of Espresso
  • Coffee bean for garnish
Method
Combine the Brothers Blend, C2 Café Cognac, sugar syrup and espresso in a cocktail shaker filled with cubed ice, shake hard and single strain in a large chilled coupette. Serve and decorate with a coffee bean.

Coconut Mojito

Later in the year I’ll be hosting a little gathering on a river launch and plan to cruise up and down the Thames for the day. Large quantities of a summery cocktail will be required and this Mojito will fit the bill perfectly.

Ingredients
  • 200ml Malibu
  • 100ml Lime Juice
  • 15 mint leaves
  • Top with with soda water
Method
Combine all ingredients into a pitcher filled with cubed ice. Garnish with mint sprig. Serves 4.

The Cîroc Whitehall Lady

Nothing really sets an evening off better than champagne.  I have to admit this Whitehall Lady cocktail has been rather popular round my way this week; all in the interests of research you understand.

A glamorous cocktail to sip in style and impress your friends with a Cannes inspired summer party.
Whitehall Lady
Ingredients
  • 50ml Cîroc Vodka
  • 15ml Elderflower Cordial
  • 10ml Fresh Lemon Juice
  • Top up with champagne
  • Ice cubes
Method
Shake all ingredients together with cubed ice and strain in to a glass.
Top up with champagne and garnish with a twist of orange or grapefruit
