Warm lentil and tomato salad

Serve this delicious salad warm as a healthy side dish to grilled meats or allow it to cool and serve it as a light lunch or starter with toasted pita bread.


Preparation time: 10 minutes

Cooking time: 30 minutes

Serves: 4


  • 750 ml water
  • 190 g brown lentils
  • 1 carrot, cut into small cubes
  • 2 tsp fresh thyme
  • salt and pepper
  • 6 tomatoes, cut roughly
  • 2 spring onions, thinly sliced
  • For the dressing
  • 2 tbsp red wine vinegar
  • 3 tsp olive oil
  • 2 tsp Dijon mustard

Recipe method

1. Bring the water to the boil in a large saucepan. Add the lentils, carrot, thyme and salt and pepper to taste. Cover and simmer for 25 minutes or until tender.

2. To make the dressing, combine the vinegar, oil and mustard in a screw-top jar and shake until thoroughly mixed.

3. Drain the lentils, turn into a large bowl and add the tomatoes and spring onions. Drizzle with the salad dressing, then toss well.
