Peanut Butter Day Recipes

24 January 2015 is Peanut Butter Day. As you may imagine this originated in the US where peanut butter is a daily staple. We're developing a love of peanut butter here in the UK too, but it still mostly appears in sandwiches.

Is peanut butter good or bad for you?

Good quality or homemade peanut butter is good for you, it's basically just peanuts which have been roasted and blended into a smooth butter with a little salt. You do need a powerful blender to make your own, but it's really easy to do.

100g grams of peanut butter contains:

45% of your recommended daily amount of Vitamin E

67% of your recommended daily amount of Vitamin B3

27% of your recommended daily amount of Vitamin B6

18% of your recommended daily amount of Folate

24% of your recommended daily amount of Copper

73% of your recommended daily amount of Maganese

Peanut butter is also a good source of protein and antioxidants. Unfortunately that 100g also contains 588 calories and a lot of fat. Luckily a little peanut butter goes a long way and you are unlikely to eat 100g in one go.

Falafel Halloumi Kebabs with Spiced Peanut Butter Marinade

These kebabs can be cooked on a BBQ or in the oven. They are made extra special with an easy spiced marinade made with peanut butter.

Squash, Carrot and Noodle Soup

Peanut butter adds a layer of flavour to this seasonal butternut squash and carrot soup. Noodles are added to make it filling and it's topped with a scattering of salted peanuts for crunch.

I love this salad. Kale, chickpeas, red pepper and chickpeas dressed in the most gorgeous peanut dressing.

Homemade hummus with a new twist, yes, you guessed it, peanut butter. What a great idea and the perfect healthy snack. I love it with carrot sticks.

Peanut Butter, Nutella and Banana French Bread

This one is more of a treat than a healthy snack. There are some healthy ingredients in there, but it's a bit calorific. If you are having a bad day, this is jut what you need to perk you up.

Bananas looking past there best. More brown than yellow? Don't throw them out, mash them and add them to these pretty cupcakes topped with peanut butter frosting.

Wash down your cupcakes with a smoothie named after the king of rock. Peanut butter, banana and strawberries with chia seeds, oats and a touch of honey. It's actually rather healthy, unlike the late great hip-swinging Elvis.

Yes, you can even make bread with peanut butter. This sumptuous bread is easy to make and has thick veins of peanut butter and jam running through it. It's made with bananas, so it's a healthy bake and there's no kneading.

Blondies are just like brownies, but a pale version. These blondies are taken to a whole new level with the addition of peanut butter and nutella. A favourite sandwich filling in my house. Don't they look great?

Cake pops were really popular and you saw the everywhere for a while, but I always found them fiddly and messy to make. Sarah has an easier and quicker version for us to try. They do look tempting.

No-Bake Peanut Butter Mousse with a Magic Chocolate Shell

This is a healthy dessert and it's dairy free too. The chocolate shell is a bit like the chocolate topping I remember pouring on ice cream as a child that hardened into a crisp chocolate shell. Of course this recipe doesn't have all the nasty additives.
