We turn to the trusty banana for this quick and easy recipe, which is better with ripe, sweet fruit.
Serves 4
- 5 bananas, peeled and sliced
- 75ml double cream
- Butterscotch sauce
- 50g soft brown sugar
- 50g butter
- 2tbsp golden syrup
- 4tbsp double cream
Method
1. Put the banana slices in a plastic box and freeze.
2. To make the butterscotch sauce, melt the butter in a saucepan. Add the brown sugar and golden syrup, and bring to a simmer. As it’s cooling, stir in the double cream.
3. Once they’re fully frozen, put the banana slices straight into a food processor and then blitz while adding the double cream. Divide between four bowls and top with the butterscotch sauce.
