Juicy baked nectarines recipe
Baked nectarines are such an easy dessert, and perfect for feeding a crowd. If you’re hosting over the weekend, then pop by a local market on Friday. You’re bound to find softer nectarines and pick up a bargain too. 

Ingredients

  • 12 ripe nectarines
  • 100g amoretti biscuits
  • 200g mascarpone
  • 1 tsp cinnamon
  • 2 tbsp runny honey
  • Optional serve: crème fraiche, blueberries

Method

  1. Preheat the oven to 180°C
  2. Wash, and then halve the nectarines. Remove the stones and arrange them in a baking tray, flat side up
  3. Put the amoretti biscuits in a sandwich bag, and gently pound with a rolling pin to break them into chunks (not so small that they turn to crumbs)
  4. Mix the crushed amoretti biscuits, mascarpone, and cinnamon. Then use a teaspoon to divide the mixture into the hollow in the nectarines, where the stone had been
  5. Drizzle honey over the nectarines, and then bake for 20-25 minutes, until soft
  6. Serve with crème fraiche and blueberries
