How to make festive chocolate truffles
There's no better way to get into the festive spirit than with some baking! Here's a delicious chocolate truffle recipe to get you started
The week before Christmas, spend some time baking a selection of goodies for friends and family. These little treats couldn’t be easier.

Ingredients

Preparation time: 45 minutes plus chilling
Makes: 60
  • 250g (8oz) cream cheese, softened
  • 375g icing (confectioners’) sugar
  • 350g (12oz) dark chocolate, chopped
  • 11⁄2 teaspoons vanilla extract
  • ¾ cup each crushed peppermintcandy, flaked coconut and chopped or ground nuts

Method

  1. In a large bowl using an electric mixer, beat the cream cheese until fluffy. Gradually beat in icing sugar until smooth.
  2. In a microwave, melt the chocolate; stir until smooth. Add the chocolate and vanilla to the cream cheese mixture and beat until blended. Cover and refrigerate for one hour.
  3. Using a small metal spoon, shape into 2.5cm (1 inch) balls. Roll in crushed peppermint candy, coconut or nuts. Store in an airtight container in the refrigerator.
Note: Truffles are normally made with dark chocolate for the richest flavour, but you can use milk or white chocolate if you prefer. This recipe includes cream cheese rather than the usual cream.
