Mary Berry explains that this Canada-inspired maple syrup cake is a real treat for a special gathering. Fill and cover ahead of time, so that the cake keeps moist.
Cuts into 6-8 generous slices
Ingredients
For the cake:
- 225g (8oz) butter, softened
- 225g (8oz) light muscovado sugar
- Finely grated zest of 1
- 4
- 100ml (3½fl oz) maple syrup
- 350g (12oz) self-raising flour
- 1 level teaspoon baking powder
- ½ level teaspoon ground ginger
- 55g (2oz) pecan nuts, chopped
- 450ml (¾ pint) pouring
- 2 tablespoons maple syrup
- Zest of 1 orange, to decorate
