Broccoli soup recipe
Broccoli is not everyone’s favourite vegetable, but it is extremely healthy so this is an excellent and easy way of getting vital nutrients in a delicious soup.
Preparation time: 15 minutes
Cooking time: 25 minutes
- 1 onion, chopped
- 2 teaspoons olive oil
- 300g frozen or fresh broccoli
- 460ml chicken stock
- 1 teaspoon dried oregano
- Cayenne pepper
- 230ml skimmed milk
1. Cook the onion in the oil in a medium saucepan until translucent.
2. Add the broccoli, stock, oregano and a pinch of cayenne pepper. Simmer until the broccoli is firm but tender.
3. Purée the mixture in a blender. Return to the saucepan and add the milk. Gently heat through.
