Beef stir-fry

This super quick stir-fry uses hoisin sauce giving the dish a sweet, spicy and smoky flavour.

Ingredients
- 175g wok-ready egg noodles
- 1 tablespoon sunflower oil
- 2 large cloves garlic, crushed
- 1 teaspoon grated fresh ginger
- 1 large red pepper, seeded and thinly sliced
- 125g small button mushrooms, halved
- 200g lean sirloin steak, thinly sliced across the grain
- 85g mangetout, halved lengthwise
- 4 spring onions, sliced
- 60ml hoisin sauce
Recipe method
1. Soak the noodles according to the packet instructions, then drain well and set aside.
2. Heat the sunflower oil in a wok or large non-stick frying pan over a high heat. Add the garlic and ginger and stir-fry for 1 minute, then add the pepper and mushrooms and stir-fry for about 2–3 minutes, or until the pepper starts to soften.
3. Add the steak, snow peas and spring onions to the wok and stir-fry for a further 1–2 minutes, or until it is cooked to your liking.
4. Add the hoisin and soy sauces to the wok and stir well until bubbling, then drizzle in the sesame oil, if using. Divide the noodles between serving bowls and serve with the steak and vegetables over the top.
