One of the best things about a roast dinner is the leftovers! Food writer Helen Best-Shaw, suggests 10 delicious ways to make the most of your Sunday lunch.

I unashamedly love leftovers. If you take just a little time to cook extra, careful use of leftovers can provide delicious, low-effort meals for the next few days.

Simply buy a large piece of meat and cook extra vegetables and you are set for the next few days.

 

1. Chicken and quinoa burgers

A few leftovers can go a long way. My chicken and quinoa burgers use just one chicken thigh to feed two.

 

2. Roast beef poutine

Poutine is a Canadian dish from Quebec consisting of chips and cheese curds and topped with gravy. This more sophisticated version uses roasted salad potatoes and beef and is topped with cheese curds and gravy.

Endlessly adaptable and perfect for Monday evening.

 

3. Everything but the kitchen sink soup

This soup could also be known as fridge-bottomy-soup, and uses up all those bits and bobs you have leftover, or lurking in the bottom of the fridge. 

This version uses the lentils from the pantry and any leftover chicken, lamb, turkey or beef.

These delicious leftover vegetable fritters are perfect for breakfast, lunch or supper.

To make them, simply mix up leftover vegetables and odds and ends of cheese with mashed potato and fry.

Buy wonton wrappers from any Chinese or Asian supermarket and freeze until you are ready to use them.

This simple recipe for vegetarian roast potato tikka masala drizzles tikka sauce over potatoes as they roast. Speed the process up and reheat your leftovers adding a jarred curry sauce as you go. 

 

8. Turkey (or chicken) tetrazzini

Named after opera singer Luisa, Tetrazzini is an American baked pasta dish, with a creamy sauce containing turkey, mushrooms and peas.

Endlessly adaptable, you can use leftover ham or chicken and add frozen peas or corn. A simple way to have a family-pleasing meal on the table in 30 minutes.

 

9. Open chicken tacos

Mexican food is an excellent way to use up leftovers; think of burritos or burrito bowls. Most foods are improved by the addition of some chilli, avocado, sour cream and cheese. 

These mini open chicken tacos are easy to make, simply toast some tortillas, and top with leftovers. 

Adapt them by adding some tomato sauce and call them Mexican pizza!
