10 wonderful ways with your leftover Sunday roast

One of the best things about a roast dinner is the leftovers! Food writer Helen Best-Shaw, suggests 10 delicious ways to make the most of your Sunday lunch.

I unashamedly love leftovers. If you take just a little time to cook extra, careful use of leftovers can provide delicious, low-effort meals for the next few days.

Simply buy a large piece of meat and cook extra vegetables and you are set for the next few days.

 

1. Chicken and quinoa burgers

A few leftovers can go a long way. My chicken and quinoa burgers use just one chicken thigh to feed two.

 

2. Roast beef poutine

Poutine is a Canadian dish from Quebec consisting of chips and cheese curds and topped with gravy. This more sophisticated version uses roasted salad potatoes and beef and is topped with cheese curds and gravy.

Endlessly adaptable and perfect for Monday evening.

Mexican food is an excellent way to use up leftovers; think of burritos or burrito bowls. Most foods are improved by the addition of some chilli, avocado, sour cream and cheese. 

These mini open chicken tacos are easy to make, simply toast some tortillas, and top with leftovers. 

Adapt them by adding some tomato sauce and call them Mexican pizza!
