10 wonderful ways with strawberries

This is my favourite time of year. Sunshine, heat and berries.
That’s a bit optimistic isn’t it? The sunshine’s mixed with lots of rain and the heat teases us then disappears again. I haven’t even unpacked my sandals yet.
The one thing we can rely on is British berry season. Gooseberries, raspberries, strawberries and blackberries. I love them all, but strawberries are my personal favourite. It feels like I’m eating my body weight in them at the moment. They’re so good.
So far I’ve been eating them out of the punnet, but I thought it was time to start doing more with them, so I’ve been gathering recipes.

Chilli Chocolate Strawberry Smoothie
A delicious thick smoothie with a kick of chilli. This one’s made with frozen strawberries, which it gives it the thick ice cream like texture, but it would be wonderful with fresh strawberries too.

Extra Fruity Strawberry Jam Tarts
I do like jam tarts and these are extra special. They start with a base of strawberry jam and are topped with apple slices and fresh strawberries before they’re baked until golden. Easy and delicious.

Strawberry Shortcake Overnight Oats
Overnight oats are really big in the US, but you don’t hear about them so much here. Basically you mix oats with Greek yoghurt and fruit, leave it in the fridge overnight and enjoy it in the morning either hot or cold. All the flavours develop nicely and the oats are beautifully soft. It’s more like a dessert, but healthy and filling. This one’s made with strawberries and strawberry jam and tastes fabulous.

Strawberry Lemonade
There’s something so summery about homemade lemonade. It tastes so much nicer than shop-bought lemonade and has none of the hidden nasties. This one’s taken to a whole new level with the addition of fresh strawberries. So refreshing on a hot summer’s day.

Very Berry Fruit Leather
You may have seen this in the shops before but didn’t realise you could make your own. It’s a great energy snack if you are out walking. It’s made with fresh fruit, a little lemon juice and honey, so it’s a healthy snack too. This fruit leather was made with strawberries and blueberries and left to bake at a low temperature overnight, so it was ready to cut and roll up the next morning.

Strawberry Chocolate Cake with Rose Tea Ganache
Doesn’t that look decadent? Chocolate cake made with strawberry jam and Turkish delight, topped with rose and tea flavoured chocolate ganache and finished with chocolate dipped strawberries.

Another recipe teaming strawberry and rose flavours. This time a simple dessert layered in glasses like a cheesecake. A biscuit base topped with a fresh strawberry mousse, this is a great last minute dessert you can make and pop in the fridge while dinner is cooking.

Sichuan Chocolate Strawberries
Strawberries dipped in chocolate. Oh yes! Such a tempting treat and so simple. Finished off with a sprinkle of Sichuan pepper to bring out the flavour of the strawberries. Sichuan pepper is actually not pepper, but a dried reddish brown berry. It has a peppery taste and a lemon-like smell. It’s works really well with strawberries.
