I love kale. I always have a big bag of it in my fridge. It's the perfect ingredient to add to smoothies, soups and stews. It lasts well in the salad drawer too.

Why else do I love it? Because it's a superfood. 1 cup of kale contains more calcium than a glass of milk, more vitamin C than an orange and more than 100% of your daily recommended amount of  vitamin A. It has folate for brain development and lots of fibre to help you feel full and level out your blood sugar.

Homemade pesto is in a league of it’s own. It's so tasty and it can be made in a few minutes. Use it  to top bruschetta, swirl it through pasta or spread it on a wrap before adding some roasted vegetables. This one is made with kale and pistachios instead of the traditional basil and pine nuts.
