10 Delicious and quick veggie packed lunch ideas

Packed lunches aren’t just for the school dining hall. These ten tasty ideas are designed for children and adults alike, and for anytime throughout the year. Happy lunching!

1. The New Orleans muffuletta sandwich

Stuffed bread loaf sandwiches are perfect for any packed lunches, and beat a limp soggy sandwich any day!

A whole cob loaf is stuffed with meat, cheese and salad layers and then sliced into wedges—pack a side salad to accompany this luxurious filling packed sarnie!

 

2. Super quick vegetable pasties

Pasties and pies are always welcome in any packed lunch, they are easy to eat and can be eaten at room temperature or heated up in the office microwave.

These tasty pasties are vegetarian and very easy to make.

 

3. Chilli and garlic tofu sandwich spread

How about this healthy vegan sandwich spread for your lunch box sandwiches?

This is a very grown-up sandwich filling with onions, chillies and tofu in it, and would be fabulous as a dip for crudités too.

I’m a big fan of the “crustless” quiche, tart, flan or pie, and this recipe is filled with peppers, mushrooms and tasty ham.

They are also gluten free, which is perfect for those members of the family that can’t eat gluten products.

These delicious wraps are perfect for the little ones as well as the grown-ups.

You can get ahead and prepare the filling the night before and then make up the wrap in the morning, perfect for those with a busy schedule.

This one is vegetarian and is packed with delicious crisp salad, peppery hummus, spicy falafel, the tang of pickled beetroot and the salty creaminess of goats cheese. Delicious!

Salads are always a good addition to the lunch box, and this next recipe for an English garden salad with cheese and eggs, is a complete meal in itself.

Made with fresh free-range eggs, traditional English cheese and a generous dollop of salad cream, this is a light but filling salad.

These can be added to any packed lunch as a mid-morning or afternoon snack, and are way healthier than any chocolate bars or crisps.

This last recipe idea makes a protein packed salad which is packed with vegetables.

This would also be great as a wrap or pitta bread filling, and it really hits the spot, as it is filling.
