Delicious Scotch pancakes recipe

Pancake Day is often celebrated with French-style crepes. But why not go for a Scotch pancake instead, which are just as simple and utterly delicious.
Ingredients
- 200g self-raising flour
- 75g caster sugar
- 2 eggs
- 300ml milk
- 20g butter
- To serve: fresh fruit, fromage frais or your favourite toppings
Method
- Tip the flour and sugar into a bowl and make a little well in the middle to break the eggs into.
- Add the eggs and a big splash of milk, and use a whisk to beat it into a thick batter, then slowly add the rest of the milk, whisking it constantly to make sure there are no lumps.
- Melt the butter in a non-stick pan, and then use a tablespoon to make circles of the batter around the edge. It's useful to be methodical, starting at 12'o clock, and working clockwise.
- When bubbles start to rise, then confidently flip the pancakes using a spatula, and cook for another half-minute on the other side.
- Serve immediately, with fresh fruit and fromage frais or whipped cream.
